Fried Zucchini with Vine Tomatoes

The perfect fried zucchini with vine tomatoes recipe with a picture and simple step-by-step instructions.

  • 500 g Zucchini
  • 250 g Vine tomatoes
  • 4 tbsp Sunflower oil
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Sweet paprika
  • 1 tsp Mild curry powder
  • 0,5 tsp Turmeric
  • 0,5 tsp Garam Masala
  • 0,5 tsp Salt
  • 4 Parsley stalks for garnish
  1. Wash the zucchini, peel with the garnish peeler, halve lengthways and cut diagonally into slices. Wash and quarter the vine tomatoes. Heat sunflower oil (4 tbsp) in a coated pan, add the spices (1 teaspoon ground cumin, 1 teaspoon ground coriander, 1 teaspoon sweet paprika, 1 teaspoon mild curry powder, ½ teaspoon turmeric, ½ teaspoon garam masala and ½ teaspoon salt) and add stir-fry / roast. Add the zucchini slices and fry / stir-fry for about 6 minutes, fold in the tomato quarters and cook with the lid closed for about 4 minutes. Serve fried zucchini with vine tomatoes, garnished with parsley.
