Fried Zucchini with Vine Tomatoes
The perfect fried zucchini with vine tomatoes recipe with a picture and simple step-by-step instructions.
- 500 g Zucchini
- 250 g Vine tomatoes
- 4 tbsp Sunflower oil
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 1 tsp Sweet paprika
- 1 tsp Mild curry powder
- 0,5 tsp Turmeric
- 0,5 tsp Garam Masala
- 0,5 tsp Salt
- 4 Parsley stalks for garnish
- Wash the zucchini, peel with the garnish peeler, halve lengthways and cut diagonally into slices. Wash and quarter the vine tomatoes. Heat sunflower oil (4 tbsp) in a coated pan, add the spices (1 teaspoon ground cumin, 1 teaspoon ground coriander, 1 teaspoon sweet paprika, 1 teaspoon mild curry powder, ½ teaspoon turmeric, ½ teaspoon garam masala and ½ teaspoon salt) and add stir-fry / roast. Add the zucchini slices and fry / stir-fry for about 6 minutes, fold in the tomato quarters and cook with the lid closed for about 4 minutes. Serve fried zucchini with vine tomatoes, garnished with parsley.
