Salmon casserole with cocktail sauce, carrots and leaf spinach

Ingredients for 4 servings:

  • 400 g salmon fillet(s) (frozen)
  • 1 lemon(s), the juice
  • 200 g carrot(s), thinly sliced
  • 200 g leaf spinach
  • 250 ml cocktail sauce, ready-made product
  • 200 g cream
  • 200 g Gouda, grated

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to approximately 180°C. Thaw the salmon fillet and cut into cubes. Season with salt and pepper, and drizzle with lemon juice. Place in a baking dish along with the carrots and spinach leaves. Mix the cocktail sauce with the cream and spread over the dish. Sprinkle with grated Gouda cheese. Place in the preheated oven and bake for approximately 30 minutes until golden brown. Green tagliatelle makes a great side dish.
