Ingredients for 4 servings:
- 4 fish fillets (e.g. Nile perch)
- 8 scampi (16 on request)
- 125 ml dry white wine
- 2 bell peppers, red
- 2 zucchinis
- 2 cloves garlic
- 1 small onion(s)
- Cream cheese (herb cream cheese)
- Herb butter or garlic butter
- Parsley
- Salt
- pepper
- some lemon juice
- 2 bell peppers, yellow
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Spread a thin layer of herb cream cheese in a baking dish. Place the fish fillets, seasoned with lemon, salt, and pepper, on top, and add the wine. Dice the bell peppers, zucchini, onions, and garlic, then lightly sauté them in a pan with butter. Season with salt and pepper. Pour over the fish. Cook in a preheated oven at 190°C for about 20 minutes. Shortly before the end of the cooking time, fry the scampi in garlic or herb butter and then pour over the cooked fish. Sprinkle with chopped parsley and serve.
