Quark cream, grandma's style

Ingredients for 4 servings:

  • 2 tsp, levelled gelatin powder, white
  • 4 tbsp water, cold, for mixing
  • 250 g quark
  • 125 ml milk
  • 100 g sugar (4 heaped tbsp)
  • some lemon peel, grated
  • ½ lemon(s), the juice
  • 125 ml cream
  • 1 packet of vanilla sugar
  • n. B. Cherry(s), red, for decoration

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Total time approx. 30 minutes

Mix the gelatin with the water, let it stand for 10 minutes to swell, stir continuously until dissolved, and then chill. Gradually mix the strained quark with the milk, sugar, lemon zest, and juice, then add the lukewarm gelatin solution. Whip the cream until stiff, sweeten with vanilla sugar, and fold into the quark mixture. Transfer the cream to a glass bowl, chill to set, and garnish with cherries. Variation: Pour the cream over 500g of any sweetened soft fruit.
