Beef and lentil stew

Ingredients for 4 servings:

  • 800 ml beef bouillon
  • 500 g lean, boneless soup meat
  • 600 g potatoes
  • 400 ml coconut milk
  • 100 g lentils, red
  • 1 pinch(s) of coriander, dried
  • salt and pepper
  • curry powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours 15 minutes

Dice the meat. Bring the broth to a boil in a pot, add the diced beef, and simmer for about 90 minutes. Meanwhile, peel, wash, and dice the potatoes. After 90 minutes, add the potatoes, lentils, and coconut milk and simmer for another 15 minutes, until the lentils have broken down. Finally, season the stew with salt, pepper, coriander, and curry powder, and serve with bread or flatbread.
