Soup with green beans and fresh meatballs

Ingredients for 2 servings:

  • 400 g potatoes
  • 400 g minced meat
  • 400 g green beans
  • 4 stalks of savory
  • 6 sprigs of oregano
  • 1 liter vegetable broth
  • 1 egg(s)
  • 1 some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Tie the savory tightly into a bunch with kitchen string. Finely chop the oregano. Peel the potatoes and cut into large cubes. Wash, trim, and roughly chop the beans. Knead the minced meat, egg, pepper, salt, and half of the oregano into a smooth mixture and form small meatballs, roughly the size of the diced potatoes. In a pot, first cook the potatoes and savory in the vegetable stock for about 8 minutes. Then add the dumplings and beans and let everything simmer for another 10 minutes. Once everything is tender, remove the savory and season the soup with the remaining oregano, salt, and pepper. If you don’t have fresh savory, add a tablespoon of dried savory in a tea infuser or tea bag to the pot.
