Ingredients for 5 servings:
- 450 g fish fillet(s) (haddock fillet)
- 2 scallop(s), fresh
- 225 g fish fillet(s) (monkfish fillet)
- 175 g squid(s)
- 175 g prawn(s), peeled
- 6 tbsp parsley, finely chopped fresh
- 2 tbsp tarragon, freshly chopped
- 4 tbsp mint, finely chopped fresh
- 3 tbsp olive oil
- 1 lemon(s), the juice
- Salt and pepper, freshly ground
- 1 lemon(s), the juice
- 2 spring onions
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cut the haddock into small pieces, clean the scallops, and dice the monkfish. Clean the squid and cut into rings. Steam them together in lightly salted water until tender. Drain, let cool, and add to a mixing bowl with the shrimp. Combine all the herbs with the oil, juice, finely chopped spring onions, salt, and pepper. Pour over the fish and mix gently. Let stand for about 30 minutes.
