Ingredients for 6 servings:

  • 1 cup mayonnaise
  • 2 tsp mustard, hot
  • 4 tbsp vinegar (wine vinegar)
  • 1 garlic clove(s), squeezed
  • 2 tsp anchovy paste
  • 1 pinch of cayenne pepper
  • 4 tbsp oil
  • 2 tsp tomato ketchup
  • 2 tbsp capers, very small

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk the mayonnaise with 4 tablespoons of boiling water until smooth. Then, using a whisk, mix in the mustard, vinegar, garlic, anchovy paste, and cayenne pepper. Stir the oil and ketchup into the sauce and finally add the capers. This sauce goes well with grilled fish, meat, ham, and meat fondue.
