Ingredients for 4 servings:
- 500 g potatoes, waxy
- 1 onion(s), red
- 2 tbsp capers
- 6 anchovies
- 2 tbsp caviar, black
- 3 tbsp olive oil, good
- ½ lemon(s) or lime
- ½ tsp chili, crushed
- ¼ bunch parsley, chopped, preferably flat
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Boil the potatoes, let them cool, and peel them. Cut them into cubes. Add the onion, sliced into rings. Tear the anchovy fillets into small pieces and add them. Add the rest of the ingredients, except for the caviar, and stir. Garnish with the caviar on top. It looks great, is light and unusual, and works well on buffets without breaking the bank.
