Ingredients for 6 servings:

  • 1 ½ kg potato(s), waxy
  • 5 eggs
  • 1 small jar of pickled gherkins
  • 2 apples, peeled
  • 1 onion(s)
  • 1 small jar of mayonnaise
  • pepper
  • Salt
  • Paprika powder, sweet
  • 1 tbsp cucumber juice

Instructions

Working time approx. 45 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 45 minutes

Boil the potatoes in their jackets until al dente and hard-boil the eggs. Let cool, peel the potatoes, slice them, and peel the eggs. Dice the apples, onion, and cucumbers, and mix everything together. Add the mayonnaise and mix well. Season with spices and add 1-2 tablespoons of the cucumber juice to prevent it from becoming too dry. Don’t skimp on the sweet paprika, as this gives it its “healthy” reddish color! Let it sit for a day; that’s when it tastes best!
