Ingredients for 4 servings:

  • 4 eggs, separate
  • 100 ml milk
  • 1 tsp salt
  • 1 tsp mustard
  • 8 slices of toast
  • 225 g Gorgonzola
  • ¼ liter beer (pilsner)
  • 20 g butter
  • 20 g breadcrumbs

Beat the egg yolks with milk, season with mustard and salt. Cut the toast into cubes, stir about 3/4 into the egg mixture, and add the diced cheese. Let it sit for about 15 minutes, stirring gently occasionally. Then pour in the beer. Beat the egg whites until stiff and fold into the cheese mixture. Lightly grease an ovenproof dish and sprinkle with breadcrumbs. Pour in the mixture, sprinkle on the remaining toast cubes, and garnish with small knobs of butter. Bake at 190°C for 30 minutes. Serve with pilsner, of course, and a hearty green salad.
