Ingredients for 4 servings:

  • 250 g blueberries, strawberries or other fruits
  • 250 ml milk
  • 400 g quark
  • 60 g sugar
  • 1 vanilla pod(s), pulp only
  • 30 g cornstarch
  • 1 egg yolk
  • 6 tbsp biscuits to taste, crumbled
  • some lemon juice

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 20 minutes

Blueberries, strawberries… or other fruits

Peel the berries/fruit and cut into fairly large pieces. Mix about half of them with the quark. Set the rest aside. Pour about 50 ml of the milk into a small bowl and mix with the cornstarch; then add the egg yolk and whisk. Briefly bring the remaining milk to a boil in a saucepan with the sugar and vanilla seeds, then remove from the heat. Add the mixed cornstarch and egg yolk and mix everything well with a whisk. Allow to cool slightly, stirring frequently. Add the slightly cooled pudding to the quark mixture and mix everything well with a whisk. Season to taste with a little lemon juice. In serving glasses, first place a layer of biscuit crumbs, then a layer of quark-pudding mixture, then more biscuit crumbs and a few pieces of fruit. Cover the glasses with the mixture and decorate with some crumbs and fruit. Chill in the refrigerator and then serve.
