Asparagus pasta

Ingredients for 4 servings:

  • 1 kg asparagus, green
  • 400 g tomatoes
  • 4 tbsp oil (olive oil)
  • 50 g Parmesan
  • 400 g pasta (spiral pasta)
  • Salt and pepper, from the mill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the tomatoes and dice them into small pieces. Cut the asparagus into 3-4 cm long pieces. Heat the oil, sauté the asparagus for 5 minutes, add the tomato pieces, season with salt and pepper, and cook covered for 15-20 minutes. Cook the pasta until al dente, serve with the asparagus, and sprinkle with Parmesan cheese.
