Caper dressing

Ingredients for 1 servings:

  • 1 medium-sized potato(s), approx. 100 g
  • 1 small onion(s)
  • 1 bunch of chives
  • 100 ml vegetable stock
  • 2 tbsp capers
  • 4 tbsp balsamic vinegar
  • 1 tsp mustard, sweet
  • 4 tbsp sunflower oil
  • Salt and pepper from the mill
  • some honey

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

tastes good with lamb’s lettuce

Boil the potatoes, peel them, press them through a potato ricer, and mix with the broth. Peel the onion and finely dice it, slice the chives into thin rings, and add both to the potato and broth mixture. Mix in the vinegar, mustard, and oil well and season the dressing with salt and pepper. If it’s too acidic, stir in a little more honey. Finally, add the capers. This dressing goes very well with lamb’s lettuce or radicchio.
