Lamb's lettuce with melted onion

Ingredients for 2 servings:

  • ½ onion(s)
  • some cream
  • 1 shot of white wine or rosé
  • 1 shot of vinegar (spirit vinegar)
  • 2 servings of lamb’s lettuce
  • Mustard
  • oil
  • salt and pepper
  • Sugar
  • possibly carrot(s)
  • possibly Parmesan

Working time approx. 10 minutes; Total time approx. 10 minutes

Lamb’s lettuce with lukewarm, melting salad dressing

Finely chop the onions and fry them in a little good oil, such as olive oil. When they’re golden brown, deglaze with a splash of wine, add a generous splash of vinegar, and simmer over low heat until reduced. Season with mustard, salt, pepper, and sugar. Finally, whisk in a little cream to make the dressing smooth. Pour the warm sauce over the well-washed and dried lamb’s lettuce. Garnish with a few small diced carrots and/or freshly grated Parmesan cheese.
