Summery mozzarella and melon salad

Ingredients for 6 servings:

  • 400g mozzarella
  • 1 kg melon(s) (watermelon)
  • 3 nectarines
  • 1 romaine lettuce
  • 1 bunch of mint
  • 6 tbsp balsamic vinegar
  • salt and pepper
  • 1 tsp sugar
  • 6 tbsp olive oil, very good

Working time approx. 20 minutes; Total time approx. 20 minutes

A wonderfully refreshing salad for hot summer days

Trim the lettuce and cut or tear into bite-sized pieces. Dice the melon and mozzarella, and wedge the nectarines. Roughly tear the mint. Mix the dressing ingredients together to make a vinaigrette and pour it over the salad. Mix and serve immediately. The mint gives the salad a wonderfully fresh taste. Serve with a piece of baguette, and you have a light summer dish.
