Ingredients for 3 servings:

  • 1 bunch radishes (icicles)
  • ½ bunch of spring onions
  • 2 tbsp chives
  • 2 tbsp parsley
  • 150 ml vegetable stock
  • some balsamic vinegar
  • some olive oil

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Total time approx. 30 minutes

Radish salad

Peel the icicles, wash them, and slice them thinly. Wash the spring onions and slice them finely. Place everything in a bowl, pour over hot vegetable stock, and let it steep for 20 minutes. Add the herbs and season with balsamic vinegar and olive oil to taste.
