Ingredients for 4 servings:
- 1 avocado(s), ripe, but still firm
- 500 g strawberries
- 2 spring onions
- 1 tbsp coriander leaves, chopped
- Chili pepper(s), without seeds, very finely diced
- salt and pepper
- ½ orange(s), the juice
- ½ lime(s), the juice
- ½ tsp agave syrup
- 1 tbsp extra virgin olive oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
For the marinade, combine the orange, lime, and agave syrup with the chili, salt, and pepper, then whisk in the olive oil. Peel the avocado, remove the stone, dice the flesh, and immediately add it to the marinade. Wash and hull the strawberries, then dice them as well. Wash, peel, and chop the spring onions. Add the strawberries and spring onions to the avocado, mix gently, and season to taste. Sprinkle with the coriander leaves and serve with fish or poultry, for example.
