Ingredients for 4 servings:
- 1 handful of fresh herbs (e.g. parsley, oregano, basil,…), roughly chopped
- 20 g butter
- 20 g flour
- 1 onion(s), finely chopped
- ¾ liter vegetable broth
- 200 ml coconut milk, more or less if needed
- 1 pinch of chili flakes
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Melt the butter and sauté the chopped onion until translucent. Then stir in the flour and pour in the broth. Add the chili flakes (or pepper) and a few herbs to the soup, bring to a boil, and simmer for about 15 minutes. Then, using a hand blender, blend the remaining herbs and coconut milk into the soup. Season with salt and pepper. Croutons, or carrot slices cooked in salted water, are suitable garnishes.
