Ingredients for 1 servings:
- 100 g margarine
- 100 g sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
- 2 eggs
- 2 tbsp rum or 0.5 bottle rum flavoring
- 150 g flour
- 1 tsp baking powder
- 100 g hazelnuts, ground, or almonds or coconut flakes
- Margarine for the mold
- Breadcrumbs for the mold
- kg plum(s)
- powdered sugar for sprinkling
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes
Whisk the margarine with sugar, vanilla sugar, salt, eggs, and rum until fluffy. Mix the flour with the baking powder and add to the batter along with the ground hazelnuts. Grease a 26cm springform pan, pour the batter into it, and slightly raise the edges. Cut the plums on one side only, remove the stones, and place them whole, close together, in the pan. Bake the cake at 175°C (top/bottom heat) for about 60 minutes. Do a skewer test. I then let the cake cool in the oven, opening only a small crack. If desired, it can be sprinkled with powdered sugar and served. This recipe makes 12 cakes.
