Spelt muffins with banana and chocolate sprinkles

Ingredients for 1 servings:

  • 190 g spelt flour
  • 100 g chocolate sprinkles, mixed
  • 50 g Stevia
  • 2 tbsp vanilla sugar
  • ½ pack of baking powder
  • 30 g starch flour
  • 1 vanilla pod(s), including the pulp
  • 20 g oat flakes
  • 100 ml milk
  • 3 eggs
  • 1 banana(s), ripe
  • 150 g butter, soft

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Instead of starch and vanilla bean pulp, you can also use 1 packet of vanilla pudding powder. First, preheat the oven to 160°C. Mix together all the dry ingredients, except the chocolate sprinkles. In a separate bowl, whisk the eggs with the banana and butter, then stir in the milk and vanilla seeds. Now, while stirring constantly, combine the wet ingredients with the dry ingredients. Once everything is well blended, carefully stir in the chocolate sprinkles. Divide the batter among 12 muffin cups and bake at 160°C for 20-25 minutes. I let the muffins cool in the oven with the lid on for another 10 minutes before removing them.
