Black radish salad

Ingredients for 2 servings:

  • 1 large radish(s), black
  • ½ onion(s)
  • 5 tbsp cream, or low-calorie sour cream or yogurt
  • 1 tbsp vinegar, e.g. light fruit vinegar
  • 1 tsp honey, liquid, or sugar, or sweetener
  • 1 tbsp currant juice, or orange juice
  • salt and pepper

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

If you like white radish, you will love black!

Clean the radish, peel it if necessary (if the black color bothers you), and grate it finely, ideally using a food processor. Season the grated radish well with salt and mix well, then let it stand for about 15 minutes. Finely dice the onion and mix it with the remaining ingredients in a salad bowl to make a salad dressing. After the stand time, add the salted radish and its liquid to the salad dressing and mix well, adding more seasoning if necessary. It can be served immediately, but we like it best after it has stood for a few hours. Then add more seasoning if necessary, as the radish continues to release more water. Serve with fresh farmhouse bread, thickly spread with butter, and the meal is complete.
