Ingredients for 4 servings:
- 200 g pasta, small pasta rolls or similar
- 500 g cucumber(s)
- 250 cherry tomatoes
- 200 g radishes
- 200 g spring onions
- 400g mozzarella
- 100 g balsamic vinegar, white
- 50 g olive oil
- 1 garlic clove(s)
- 1 bunch of basil
- salt and pepper
- Tabasco
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Tomatoes and cucumbers
Cook the pasta in salted water until al dente, slice the cucumber lengthwise, remove the seeds and cut into thin slices, quarter the cherry tomatoes, slice the radishes and spring onions, dice the mozzarella, press the garlic and finely chop the basil. Put all the ingredients except the pasta in a bowl, pour over the balsamic vinegar and olive oil and mix, season to taste. Then add the cooked pasta (separated from the water first) to the bowl with the remaining ingredients, mix again and serve. It can also be lukewarm. Fresh bread goes well with it. I could imagine it with finely sliced ham or, instead of mozzarella, Greek feta cheese.
