Chicken breast with cheese crust

Ingredients for 4 servings:

  • 400 g chicken breast fillet(s)
  • 500 g mushrooms or oyster mushrooms
  • 20 g fat
  • 1 cup crème fraîche
  • 120 g cheese, Gouda
  • 30 g Parmesan
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean and slice the mushrooms. Heat the fat and sauté the mushrooms until the liquid has evaporated. Season with salt and pepper. Dice the meat, season, and place in a greased baking dish. Arrange the mushrooms on top. Mix the grated Gouda with the Parmesan, stir two-thirds of it into the crème fraîche, and pour over the mushrooms. Sprinkle the remaining cheese on top. Bake at 225°C (middle rack) for 20 to 25 minutes.
