Watermelon, mozzarella, and arugula salad with mustard dressing and pine nuts, served in a melon

Ingredients for 4 servings:

  • 1 small watermelon(s) (mini watermelon)
  • 1 1/2 packs of mozzarella (125 g each)
  • 1 handful of arugula
  • 8 small Roma tomatoes or mini vine tomatoes
  • 4 tbsp pine nuts
  • 2 tbsp vinegar
  • 1 tsp mustard
  • 1 tbsp water
  • salt and pepper
  • 1 pinch(s) of sugar
  • 1 tsp Italian herbs (e.g. fresh or dried oregano, finely chopped basil)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Quarter the watermelon and shape the flesh into small balls using a watermelon baller. Dice the mozzarella. You can also use mini mozzarella balls. Clean and wash the arugula. Wash the tomatoes, halve them, and remove the stems. Roast the pine nuts in a dry pan. Mix the dressing together and season to taste. Place the melon rinds on plates. Then arrange the arugula decoratively on the melon. Then add the tomatoes. Follow with the mozzarella and watermelon balls. Finally, drizzle with the dressing and sprinkle with the pine nuts. Serve.
