Duffy's Grilled Prawns alla Italia

Ingredients for 4 servings:

  • 1 kg king prawns
  • 1 half leek(s)
  • 1 half vegetable onion(s)
  • 5 tsp sauce (sweet chili)
  • 15 cherry tomatoes
  • 150 ml white wine
  • 3 garlic cloves
  • 2 tsp salt
  • 3 tsp, heaped pesto (tomato)
  • 40 g Parmesan
  • 1 bunch of basil
  • ½ lemon(s), the juice

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

Wash the shrimp and drain. Then wash the leek and cherry tomatoes. Halve the leek lengthwise and then finely slice. Halve the cherry tomatoes, and finely slice the onions and basil. Mix everything with the remaining ingredients in a large bowl, cover, and refrigerate for one hour. Pour the mixture into an enameled pan and grill for 15 to 20 minutes. Serve with oven-fresh baguette and a fresh salad.
