Tortellini salad

Ingredients for 4 servings:

  • 500 g tortellini, colorful, from the refrigerated section
  • 200 g cooked ham
  • 4 eggs, hard-boiled
  • 1 red bell pepper(s)
  • 1 bell pepper(s), yellow
  • 1 bell pepper(s), green
  • 4 gherkins
  • 1 bunch of radishes
  • 5 spring onions
  • 50 ml orange juice
  • ½ onion(s)
  • 2 tsp mustard, medium hot
  • 100 ml vinegar (salad vinegar)
  • 100 ml rapeseed oil
  • e.g. salt and pepper
  • Sugar
  • 100 g crème fraîche

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the tortellini according to the instructions, drain, and let cool. Dice the ham, halve, deseed, and finely dice the bell peppers. Finely dice the gherkins. Slice the radishes and finely roll the spring onions. Roughly chop the eggs. Using a blender or immersion blender, make a dressing from the orange juice, onion, mustard, salad vinegar, and rapeseed oil. Season generously with salt, pepper, and sugar, if desired. Mix everything together, stir in the crème fraîche, and season again. Tip: I got this recipe from my neighbor. For the dressing, she uses 3 sachets of Salatfix “Garden Herbs,” 8 tablespoons of water, and 8 tablespoons of oil. If anyone doesn’t mind this ready-made product…
