Caramel muffins

Ingredients for 12 servings:

  • 280 g flour
  • 3 tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt
  • 125 g sugar
  • 3 tsp vanilla sugar
  • 2 eggs
  • 125 ml buttermilk
  • 125 ml liqueur (toffee liqueur)
  • 90 ml oil
  • 85 g candy(s) (caramel pieces) according to taste, quantity variable

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

IMPORTANT – right from the start, preheat the oven to 170°C and prepare a muffin tin with baking cups. First, mix the flour, baking powder, and baking soda well in a bowl and set aside. Then, in another bowl, thoroughly whisk the eggs, buttermilk, oil, liqueur, sugar, salt, and vanilla sugar. Now add the dry ingredients to the wet ingredients and mix everything well, finally fold in the caramel pieces. Now the batter can be poured into the prepared muffin tin with the baking cups. Baking time is approximately 25-30 minutes, although this can vary slightly from oven to oven; it’s best to check the muffins with a wooden skewer before removing them. The batter yields approximately 12 large muffins.
