Peach and chicken strips

Ingredients for 4 servings:

  • 750 g chicken, shredded
  • 1 can peach(s)
  • 1 bunch soup greens, cleaned, chopped
  • 500 ml chicken stock
  • 1 tsp mustard
  • 1 tsp tomato paste
  • 200 g cream cheese spread
  • salt and pepper
  • Clarified butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Brown the chicken and root vegetables in hot clarified butter. Briefly fry the tomato paste and mustard, then deglaze with the chicken stock. Simmer for 15 minutes. Puree the peaches with their juice and the root vegetables. Return the pureed peaches and root vegetables to the meat, add the cream cheese, and bring everything back to a boil. Season with salt and pepper and serve with either rice or pasta.
