Ingredients for 4 servings:
- 3 tbsp goose fat
- 200 g smoked ham cubes
- 3 large onions
- 2 pts. kale (frozen), coarsely chopped
- 1 large leek(s)
- 4 Mettwurst or Kohlwurst, fresh
- 4 Mettwurst (ham sausages), smoked
- 4 tbsp oat flakes, wholegrain
- Salt and pepper, black, from the mill
- Mustard
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes
Heat the goose fat in a large pot, add the diced ham and roughly chopped onions. Brown everything thoroughly. Add the kale and top up with boiling water, stirring occasionally. Once the kale has thawed, simmer for about 25 minutes. Add the Mettwurst and finely chopped leek and cook for another 25 minutes. Stir in the oatmeal, season with pepper and salt, and cook for another 5 minutes. Remove from the heat and stir in the mustard. The kale tastes best reheated. If you like, you can also cook a few slices of smoked pork with it. Serve with fried potatoes (made from raw potatoes) with onions and a beer.
