Ingredients for 2 servings:

  • 90 g pasta
  • 4 tbsp oil
  • 5 falafel, store-bought or homemade
  • 1 small onion(s)
  • 1 carrot(s)
  • 1 cup(s) peas, frozen
  • 1 tomato(s)
  • 1 garlic clove(s), squeezed
  • salt and pepper
  • Paprika powder
  • ½ tsp coriander powder, as needed

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cook the pasta according to the package instructions. Dice the onion and tomato, and thinly slice the carrot. Heat the oil in a pan. Fry the falafel, then add the onion, carrot, and peas. Continue frying for about 5-10 minutes. Add the cooked pasta, diced tomatoes, and garlic. Mix everything well, season, and taste. Serve warm as a vegetable stir-fry or cold as a pasta salad.
