Beetroot salad with green apple

Ingredients for 2 servings:

  • 3 beetroot, cooked, vacuum packed
  • 1 apple, green, preferably Granny Smith
  • 1 walnuts
  • 6 Celery
  • 2 spring onions
  • some honey
  • some olive oil
  • 2 tbsp horseradish, from the jar
  • 3 tbsp cream cheese, natural
  • 2 tbsp grapefruit juice or lemon juice
  • some Parmesan

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Thinly slice the celery and spring onions crosswise, slice the apple into thin strips, chop the walnuts, roast them in a pan, and add them. Thinly slice the beetroot and marinate briefly with a little olive oil, grapefruit juice, honey, salt, and pepper. Combine the horseradish with the cream cheese. Mix everything thoroughly in a bowl. Sprinkle with a little Parmesan cheese, if desired.
