Refined Marzipan Cookies / Biscuits

- 200 g Soft butter
- 4 Egg yolks, fresh
- 100 g Marzipan raw mass
- 100 g Sifted powdered sugar
- 200 g Sifted flour
- 1 pinch Salt
- Lemon peel
- Preheat the oven to 200 degrees (convection).
- Put the butter, egg yolks and marzipan mixture (all at room temperature) in a bowl and stir well. Work in lemon peel (to taste).
- Sieve the powdered sugar, stir until smooth and now sieve the flour and add the salt. Process all ingredients into a dough.
- Pour the marzipan biscuit batter into a 40 mm piping bag and place on the baking sheet. With the piping bag you can put the dough in a shape of your choice on the tray.
- Bake at 200 ° C for about 8-10 minutes. After baking, let it cool down and cover with chocolate.
