Peach-Apricot Cream

Ingredients for 1 servings:

  • 2 tbsp quark (cottage cheese)
  • 1 tbsp mascarpone, or mascarino
  • 5 tbsp yogurt
  • 1 peach(s) or nectarine
  • 1 apricot(s)
  • 1 sprig of mint or lemon balm

Pit the peach and apricot and place it in a tall bowl with the remaining ingredients. Blend with a hand blender until the desired consistency is reached. The cream also tastes good chilled. We eat it immediately after preparation. Tip: The quantities can be adjusted. The mascarpone can also be omitted. However, that certain creaminess will be missing. If you’re making the cream for several people, a maximum of 2-3 tablespoons of mascarpone is sufficient! If you don’t like apricots, leave them out. You can also use any kind of berries instead of the peach.
