Ingredients for 8 servings:
- 3 zucchini, large
- 2 tbsp cream cheese, low-fat
- 3 tbsp tomato paste with basil
- 2 balls of mozzarella
- 1 pack of ham (turkey ham), wafer-thin
- possibly milk
- salt and pepper

totally delicious and a hit at every barbecue party
First, slice the zucchini lengthwise into 2-3 mm thick slices. I always use a bread slicer; it works best that way. For three large zucchini, you’ll get about 48 slices. Mix the tomato paste and cream cheese, adding a little milk if needed for easier stirring. Season with salt and pepper. First, spread the sliced zucchini with the tomato paste and cream cheese mixture, then add a thin slice of turkey ham and finally a piece of mozzarella to one end of the zucchini. Then roll up the zucchini slices. It’s best to start with the end with the mozzarella. Thread everything onto 8 skewers. Season with salt and pepper again. You can grill the zucchini right away, or let it drain a little longer. The best way to do this is to place it in a sieve and place a plate underneath. I always prepare the skewers at lunchtime if we’re having a barbecue in the evening.
