Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

with sour cream dip

Cut the cauliflower into florets (approx. 500g), clean them, and cook in salted water until al dente. Then place them in a sieve and drain well. Bring the milk to a boil in a saucepan on the stove, stir in the semolina, and bring everything to a boil. Remove from the heat and let it cool slightly. Then add the eggs to the semolina mixture and stir well. Roughly chop the cauliflower florets and add them along with the ham, Parmesan, and parsley. Mix everything well and season with ground nutmeg, salt, and pepper. With slightly moistened hands, form into eight patties. Heat a little clarified butter or oil in a pan and fry the patties on both sides until golden brown. Drain briefly on kitchen paper. For the dip, combine the sour cream with the garlic and chives and season with salt. Serve the cauliflower and ham patties with the dip and salad.
