Tomato-mozzarella with a twist

Ingredients for 8 servings:

  • 1 pack of cherry tomatoes or cocktail tomatoes, not too small
  • 1 cup of mozzarella (minis)
  • 1 bunch basil, fresh
  • some balsamic vinegar
  • some olive oil
  • some pesto, green
  • some salt and pepper

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Finger food, party snack

In a bowl, combine the olive oil, balsamic vinegar, and green pesto with a little salt and pepper. Drain the mini mozzarellas and add them to the bowl to marinate. Stir occasionally to ensure the mini mozzarellas are nicely marinated. Wash the tomatoes, cut off a small cap, and scoop out the tops with a teaspoon. Pluck the basil leaves, wash them, and push one leaf into each tomato (it’s best to leave a little bit sticking out; it looks nicer). Now push one mini mozzarella into each tomato with the basil leaf. If desired, use a teaspoon to drizzle a few drops of the oil and balsamic vinegar mixture over the mini mozzarellas and into the tomatoes. Now place the “stuffed” tomatoes on small plates or all on a platter.
