Apple cake with eggnog and almonds

Ingredients for 1 servings:

  • 150 g butter
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 3 eggs
  • 200 g flour
  • ½ pack of baking powder
  • 100 g almonds, ground
  • 1 lemon(s), organic, zest
  • 125 ml eggnog
  • Fat and flour for the mold
  • 800 g apples
  • 4 tbsp lemon juice
  • 50 g honey
  • 70 g butter
  • 3 tbsp milk
  • 140 g almonds, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Mix the butter, sugar, vanilla sugar, and eggs into a creamy batter. Sift the flour with the baking powder, then fold in the ground almonds and lemon zest. Add the egg liqueur and mix well. Pour the batter into a greased and floured 26 cm springform pan and smooth it out. Peel and core the apples, chop them, and toss them in a bowl with the lemon juice. Spread the apples over the batter. Bake the cake in a preheated oven at 180°C (top/bottom heat) for 25 minutes. Heat the honey, butter, milk, and chopped almonds in a saucepan until the butter has melted. Spread the mixture over the pre-baked cake and bake for another 25 minutes. Let the cake cool in the pan.
