Ingredients for 1 servings:
- 20 g yeast
- 275 g sugar
- 250 ml milk
- 750 g flour
- 225 g butter, soft
- some salt
- 2 eggs
- 500 g low-fat curd cheese
- 25 g cornstarch
- 500 g plum(s)
- 50 g ground almonds
- Flour for the work surface
Instructions
Working time approx. 45 minutes; Rest time approx. 50 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 2 hours 10 minutes
Crumble the yeast and mix with 1 teaspoon of sugar and a little milk. Let everything rise for about 10 minutes. Then knead into a dough with 500g flour, the remaining milk, 75g butter, 75g sugar, and a little salt. Cover the dough and let it rise in a bowl in a warm place for another 40 minutes. In the meantime, separate the eggs. Mix the quark with 100g sugar, the egg yolks, and the cornstarch. Beat the egg whites until stiff, then carefully fold into the quark mixture. Preheat the oven to 200°C. Knead the dough thoroughly and roll it out on a floured surface. Place it on a baking sheet lined with baking paper and spread the quark mixture on top. Wash and pit the plums, then place the halves tightly on top of the quark mixture. Thoroughly mix the remaining flour with the ground almonds, the remaining sugar, and the remaining butter, and crumble into small crumbs. Sprinkle these on the cake and bake everything in the oven on the middle rack for about 35 minutes. You can also crumble biscuits instead of the remaining flour and almonds and then mix them with the sugar and butter.
