Mango dressing

Ingredients for 4 servings:

  • 1 mango(s), ripe
  • 4 tbsp lemon or lime juice
  • 2 tbsp orange juice
  • n. B. Honey, 1 – 2 tsp depending on taste
  • Salt
  • Cayenne pepper
  • 5 tbsp oil, neutral

Peel the mango, remove the flesh from the pit, and roughly dice it. Puree it with lemon and orange juice and honey. If the mango is very coarse, strain the mixture through a sieve. Season with salt and cayenne pepper. Whisk in the oil vigorously. Depending on your taste and use, this basic dressing can be enhanced with grated ginger, lemon or lime zest, and/or garlic. Part of the oil can also be replaced with yogurt or crème fraîche. This fruity, spicy dressing pairs well with robust leaf salads, chicken, and rice salads.
