Tofu burger à la kikaschatz

Ingredients for 4 servings:

  • 250g tofu
  • 2 tsp vegetable broth, instant
  • 2 carrots
  • 1 onion(s)
  • 2 eggs
  • e.g. breadcrumbs
  • Herbs to taste
  • margarine
  • pepper
  • some margarine for frying

Working time approx. 30 minutes; Total time approx. 30 minutes

Crumble the tofu with a fork and fry it in a non-stick pan with the vegetable stock and a little margarine over medium heat. Then let it cool. Peel and finely grate the carrots. Peel the onion and dice it finely. Add it to the cooled tofu along with the eggs and mix well. Season to taste with herbs of your choice and pepper. Add the breadcrumbs and let it rest for a few minutes. The amount of breadcrumbs depends on the size of the eggs. The mixture should not be too wet. Using your hands or two spoons, form large or small tofu burgers – as desired. Fry in batches on both sides in a non-stick pan with a little melted margarine until golden brown. Serve with a fresh salad, tzatziki, and potatoes.
