Kohlrabi Cordon Bleu

Ingredients for 2 servings:

  • 2 kohlrabi
  • ¼ liter vegetable broth
  • salt and pepper
  • 2 slices of cooked ham
  • 2 slices of medium-aged Gouda
  • Flour
  • 1 egg(s)
  • breadcrumbs
  • Clarified butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel the kohlrabi, cut into slices approximately 0.5 cm thick, and sauté in the vegetable stock for five minutes. Remove and drain well in a sieve, pat dry with kitchen paper if necessary. Use only the four largest slices per kohlrabi. Season the kohlrabi slices with salt and pepper. Cut the ham and cheese to the size of the kohlrabi and place between two slices of vegetables. Coat first in flour, then in the beaten egg, and finally in breadcrumbs. Heat clarified butter in a pan and fry the kohlrabi cordon bleu over medium heat until browned. Serve with herb curd or a sour cream-based dip and mixed salad. Dice the remaining kohlrabi slices and toss them in a little butter to serve with the cordon bleu or use them in another dish.
