Pepper, corn and kidney bean salad

Ingredients for 2 servings:

  • 1 small can of kidney beans
  • 1 small can of corn
  • 1 m.-sized bell pepper(s), green or red
  • 1 bag of ready-made salad dressing mix (garden herbs)
  • 3 tbsp oil
  • some water

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Drain the kidney beans and corn. Wash and trim the bell peppers, then cut them into small cubes. Mix the ready-made salad dressing mix with water and oil according to the package instructions, then stir it into the salad ingredients. I don’t usually like ready-made salad dressing mixes, but this tastes absolutely delicious. Especially in the hot summer months, this salad is absolutely amazing and totally refreshing with grilled food and/or baguette!
