Mozzarella and ham rice

Ingredients for 4 servings:

  • 280 g rice
  • 2 tomatoes, ripe, firm
  • 200 g cooked ham, if possible in one piece
  • 250g mozzarella
  • 1 bunch basil or parsley, fresh or dried
  • 5 tbsp extra virgin olive oil
  • Salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the rice in plenty of boiling water. Wash the tomatoes and immerse them in boiling water, then rinse with cold water and peel. Wash and chop the fresh parsley or basil. Halve the tomatoes, remove the seeds, and dice the flesh. Dice the mozzarella and cooked ham. Drain the rice when it’s cooked, transfer it to a large bowl, and mix in the tomatoes, mozzarella, ham, and olive oil. Sprinkle with chopped herbs and serve hot.
