Ingredients for 1 servings:

  • 1 lemon(s), untreated, zest
  • 200 g margarine
  • 250 g powdered sugar, sifted
  • 4 m.-sized eggs
  • 125 g flour, sifted
  • 125 g cornstarch, sifted
  • ½ tsp baking powder
  • 250 g powdered sugar
  • 1 lemon(s), the juice
  • Fat for the mold
  • possibly breadcrumbs for the mold

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

most delicious lemon cake ever

Preheat the oven to 175°C. Beat the margarine with the powdered sugar and eggs until creamy. Mix the flour and cornstarch with the baking powder and add to the oven. Add the lemon zest and knead everything into a smooth batter. Grease a loaf pan, sprinkle with breadcrumbs if desired, and pour in the batter. Bake on the middle rack for about 1 hour. Important: After 15 minutes, cut a 1 cm deep cut into the cake lengthwise to prevent it from cracking unsightly during baking! After baking, let it cool and then turn it out. Gradually mix the powdered sugar with the lemon juice, a spoonful at a time (do not let it become too runny!) and pour over the cake.
