Mandarin rice salad

Ingredients for 4 servings:

  • 100 g rice (long grain rice)
  • ¾ liter of salt water
  • 2 gherkins (approx. 140 g)
  • 1 can of mandarin oranges (310 g)
  • 150 g lean cooked ham
  • 4 tbsp juice (tangerine juice) from the can
  • 2 drops of Tabasco
  • 1 pinch of paprika powder, rose hot
  • 1 pinch of curry powder
  • 1 pinch of sugar
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and drain the rice. Bring lightly salted water to a boil in a pot. Add the rice and let it simmer over low heat for 20 minutes. In the meantime, peel the gherkins and cut into 1/2 cm cubes. Drain the mandarin oranges in a sieve, then halve them. Cut the ham into 1/2 cm cubes. Rinse the rice in cold water in a sieve and let it cool. In a bowl, mix the cucumber cubes, mandarin oranges, and ham cubes. Season with canned mandarin orange juice, Tabasco, paprika, curry, salt, and sugar. Add the rice and mix well. Cover and let it sit in the refrigerator for 20 minutes.
