Ingredients for 1 servings:
- 170 g brown sugar
- 75 g butter, soft
- 1 cup sour cream
- 2 eggs
- 1 packet of vanilla sugar
- 180 g flour
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp ginger powder
- 1 cup dried cherries, coarsely chopped
- 3 tbsp ginger root, candied, diced
- ¼ cup hazelnuts, coarsely chopped

- 60 g brown sugar
- 3 tsp butter, cold
- 2 tbsp ginger root, candied, diced
- 60 g powdered sugar
- 1 tbsp milk

Preheat oven to 175°C. Grease and flour a cake pan. In a bowl, combine the sugar and butter, fold in the sour cream, then the eggs and vanilla sugar. Mix everything until creamy. Set the mixer to low speed. Add the flour, baking powder, salt, and ginger, and mix well. Carefully stir in the cherries and diced ginger. Pour into the cake pan and smooth the surface. In a separate bowl, combine the ginger, cold butter, and sugar. The mixture should be crumbly. Spread a handful of nuts on the cake, then spread the topping over it. Bake for 30-35 minutes. Let cool. Mix the powdered sugar and milk until the desired consistency is reached and pour over the cake. Tip: Instead of the dried cherries, you can also use morello cherries; this makes the cake moister. I like both versions.
