Ingredients for 2 servings:

  • 200 g cooked ham
  • 200 g feta cheese
  • Spinach, frozen
  • 10 cocktail tomatoes
  • 3 tbsp herb cream cheese
  • 1 bell pepper(s), yellow
  • 1 shallot(s)
  • 1 tbsp tomato paste
  • salt and pepper
  • n. B. white wine

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

without carbohydrates, with tomatoes, spinach, feta and cream cheese

Dice the shallot and bell pepper and fry in the pan with the tomato paste. Add the quartered cherry tomatoes and the previously thawed and drained spinach. Dice the feta and add half of it along with the cream cheese. If desired, you can also deglaze with a small splash of white wine. Season well with salt and pepper. Spread the vegetable and cheese mixture over the ham slices, roll them up, and place them side by side in a baking dish. Spread the remaining feta on top and bake in the oven at 180°C for 20 minutes. Serve with lamb’s lettuce with a honey-mustard dressing and a drizzle of balsamic vinegar.
