Ingredients for 1 servings:

  • 5 eggs
  • 250 g sugar
  • 750 g cream cheese, 40% fat
  • 250 g crème fraîche
  • 60 g cornstarch
  • 30 g cocoa powder
  • Fat, for the shape
  • Flour , for the shape

Instructions

Working time approx. 30 minutes; Rest time approx. 5 hours 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 6 hours 35 minutes

Preheat oven to 150°C (300°F). Grease and flour a 26cm springform pan. Beat the eggs and sugar for about 7 minutes until frothy. Stir in the quark, crème fraîche, and cornstarch one at a time. Divide the quark mixture in half and stir the cocoa into one half. Pour the light quark mixture into the springform pan first, then the dark quark mixture. Using a fork, spiral the mixture through to create a marbled pattern. Bake in the preheated oven for about 50 minutes. Then let it rest in the switched-off oven for 15 minutes. Loosen the cake from the sides and let it cool for about 5 hours.
